Preparation time: 20 minutes
Total Time: 50 min
Yield: 4 servings
- 4 hothouse or English cucumbers, peeled and sliced in medium dice
- 2 chopped green onions
- ½ honeydew melon, peeled and diced into medium size
- 1 serrano chile, finely chopped
- 1 rib celery, finely chopped
- Half cup rice wine vinegar
- Chopped leaves from 2 sprigs fresh mint
- Chopped leaves from half bunch cilantro
- Extra virgin olive oil
- 15 drops of CBD oil
- Salt to taste
- 2 tbsp of low-fat soy yoghurt
- 1 lemon
- One tablespoon of chopped flat-leaf parsley
Mix the cucumbers, melon, chile, green onions, celery, herbs, vinegar, a drizzle of olive oil and CBD oil, and salt in a big bowl. The cucumbers will leave sufficient juice. In a separate bowl, mix the yoghurt, a squeeze of lime, a 2-count of olive oil, CBD oil, and parsley and allow it to refrigerate. For serving, spoon the soup into bowls.
For best results, serve cold soup in a cup or chilled bowl. This ‘raw’ soup is completely vegan, gluten and dairy free.

CBD oil can also help in a variety of conditions like inflammation, chronic pain, anxiety and depression, skin problems like rashes and acne, neurological, respiratory and digestive distress and even epilepsy and cancer to name a few.
